Meet Our Executive Head Chef Ioannis Polychronakis

A native of Crete, Chef Ioannis embodies the Mediterranean culinary spirit, refined by a substantial French influence—a combination that has been perfected through years of dedication in the world’s most prestigious kitchens.
Chef Ioannis’s culinary journey began in Greece, blossoming in London under the guidance of Michelin-starred chefs. His impressive career includes time with Eric Chavot (two Michelin stars), Maze by Gordon Ramsay (one Michelin star), La Cuisine de Joël Robuchon (two Michelin stars), The Square under Philip Howard (two Michelin stars), and Hélène Darroze at The Connaught (two Michelin stars).
Chef Ioannis’s approach is rooted in the use of exceptional ingredients and the mastery of classic techniques with a modern twist.
